My aunt has been randomly unwell lately, so we made the decision that we'd wait until early this afternoon before committing to her coming for supper. I picked up some portobello mushrooms while I was out today so that I could experiment with the concept of stuffed mushrooms with beef and stilton, figuring that I could do up the right number when I knew whether she was coming.

As of 2pm, she was coming to supper and I was leaving at 4.15pm to pick her up. I decided to make up the mushrooms before I went out and pop them in the fridge so there would be less work when she was here. I got them done, was about to go out and then the phone rang.

Yeah, she's ill. So, she won't be here for supper.

Except, um, now I have stuffed mushrooms for two made up. I rather suspect that one person cannot eat all those mushrooms. Possibly.

So, shall I cook both the mushrooms (piled high with filling) and forgo any vegetable-y accompaniment, hoping that I don't explode, or hope that I can get away with cooking the second tomorrow?

Or possibly cook both and put the second in the fridge to reheat tomorrow?

Dilemma. Perhaps I'll do option two and figure out the re-heat tomorrow. With any luck these are going to taste amazing. Or my aunt made a good call on not coming over ;-)

I bet if you reheated one in the oven (or toaster oven, as I do) tomorrow, they'd be fine.

Save it for tomorrow! I love it when I cook something 'special' and have leftovers. (I rarely cook at all.)
